Located between 1,900–1,950 masl in El Paraíso, Cajamarca, Elicer Diaz grows this Yellow Geisha on his farms, La Palma and El Cedro. After learning the craft from his parents, Elicer set out to establish his own farms, beginning with just two hectares. Through years of hard work and continually refining his farming methods, he has built a reputation for producing exceptional coffees.
Only the ripest cherries are carefully harvested before undergoing a second hand selection to ensure only the highest quality fruit is processed. Following a 72-hour anaerobic fermentation, the coffee is slowly dried on the patio and concrete roof of Elicer’s home, where it is turned regularly to ensure even drying.
Every stage is carried out with great care, producing a clean and expressive Yellow Geisha that reflects Elicer’s dedication and the exceptional growing conditions of northern Peru.
