Fourth-generation coffee producer Sebastián Ramírez is driven by innovation in processing and fermentation, combining traditional methods with experimental techniques. At Finca El Placer, his farm in Quindío, Colombia, he produces expressive, high-quality coffees that push flavour boundaries.

Inspired by winemaking, this Pink Bourbon coffee undergoes 200 hours of carbonic maceration (a fermentation method) to build depth and precision. Hand-picked cherries are sealed in airtight tanks, where carbon dioxide is introduced to allow fermentation to develop slowly and evenly. This enhances floral aromatics, wine-like fruit notes, and a silky mouthfeel.

The cherries are then dried gradually in multiple stages - first in warmer conditions to set the flavour structure, followed by lower temperatures to protect delicate aromatics - resulting in a refined, vibrant cup.
